Method
-
Thinly slice the beef against the grain and place it in a mixing bowl.
-
In a separate bowl, combine the minced garlic, soy sauce, sesame oil, brown sugar, mirin, honey, sesame seeds, and black pepper. Mix well to form the marinade.
-
Pour the marinade over the sliced beef in the mixing bowl. Use your hands to massage the marinade into the beef, ensuring each piece is coated. Let it marinate for at least 30 minutes, or refrigerate overnight for maximum flavor.
-
Heat a grill pan or skillet over medium-high heat. Add the marinated beef and cook for about 2-3 minutes on each side until browned and cooked through. You can also grill the beef on an outdoor grill.
-
Once cooked, remove the beef from the pan and let it rest for a few minutes. Then, slice it into bite-sized pieces.
-
In the same pan, add the thinly sliced onions and carrot (if using) and cook for a few minutes until slightly softened.
-
Return the sliced beef to the pan and stir-fry everything together for another minute or two.
-
Garnish with chopped green onions and sesame seeds.
-
Serve hot with steamed rice, lettuce wraps, or Korean-style glass noodles (Japchae). You can also serve it with a side of kimchi and other Korean banchan (side dishes).
