  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are soft and translucent, about 5-7 minutes.
  • Increase the heat to medium-high and add the ground beef to the pot. Cook, breaking the meat apart with a spoon, until it is browned and no longer pink.
  • Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelized slightly.
  • If using, pour in the red wine, scraping up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
  • Add the crushed tomatoes, beef broth, salt, pepper, dried oregano, dried basil, and bay leaves. Stir to combine.
  • Reduce the heat to low and let the sauce simmer, uncovered, for at least 1 hour (longer if time allows), stirring occasionally. The sauce will thicken and the flavors will deepen.
  • Remove the bay leaves. Taste and adjust seasoning if necessary.
