  • Cardamom pods 5 piece
  • Chili peppers 2 piece
  • Salt 1 teaspoon
  • Sugar 2 tablespoons
  • Water 250 ml

  • In a large saucepan, combine all the ingredients. Stir well to ensure that the molasses and tamarind paste are fully dissolved in the vinegar and water.
  • Bring the mixture to a boil, then reduce the heat to low, allowing it to simmer gently, uncovered, for about 2 hours. This slow cooking process will infuse the vinegar with all the flavors.
  • After the mixture has reduced and thickened slightly, remove it from the heat and strain it through a fine mesh sieve or cheesecloth. Press or squeeze the solids to extract as much liquid as possible.
  • Transfer the strained sauce into sterilized bottles. Seal the bottles tightly.
  • Store the bottled sauce in a cool, dark place for at least two weeks before using. The aging process will meld the flavors together, enhancing the sauce’s complexity.
