  • 2g cumin seeds
  • 2g coriander seeds
  • 1g white peppercorns
  • 1g salt

  • 10ml vegetable oil

  • In a pan, heat the vegetable oil over medium heat.
  • Add the shallots, garlic, galangal, lemongrass, cumin seeds, coriander seeds, and white peppercorns. Sauté for 3-4 minutes until the ingredients release their aroma.
  • Remove the pan from heat and let the mixture cool down.
  • In a mortar and pestle, pound the cooled mixture along with the green chili peppers, shrimp paste, and salt. Pound until you get a smooth paste.
  • Heat the pan again over medium heat and add the green curry paste. Stir-fry for 2-3 minutes to release the flavors.
