  • Slice of crusty bread 50 g

  • If using fresh red peppers and tomatoes, roast them in the oven at 200°C (392°F) until charred and soft. Peel the peppers and tomatoes, removing seeds and stems.
  • In a dry skillet over medium heat, lightly toast the almonds until golden brown, careful not to burn them.
  • In a food processor or blender, combine the roasted red peppers, tomatoes, toasted almonds, garlic cloves, and the slice of toasted bread torn into pieces. Blend until the mixture forms a coarse paste.
  • With the blender running, slowly add in the sherry vinegar and extra virgin olive oil. Blend until the mixture becomes smoother but still retains some texture.
  • Add the smoked paprika, cayenne pepper (if using), and salt to taste. Blend briefly to incorporate.
  • Transfer the sauce to a serving bowl and garnish with chopped fresh parsley. Serve with your choice of seafood, grilled vegetables, or meat.
