Romesco sauce is a vibrant, nutty condiment originating from the Catalonia region of Spain. Its rich history dates back to the fishermen of Tarragona, who created this sauce to accompany the day’s catch. Romesco is a versatile sauce, traditionally served with seafood, but it can also elevate grilled vegetables, chicken, and even pasta dishes. Made with a blend of roasted red peppers, tomatoes, almonds, and a variety of seasonings, Romesco sauce is a testament to the Mediterranean palate, combining sweet, smoky, and tangy flavors into a harmonious blend.

  • If using fresh red peppers and tomatoes, roast them in the oven at 200°C (392°F) until charred and soft. Peel the peppers and tomatoes, removing seeds and stems.
  • In a dry skillet over medium heat, lightly toast the almonds until golden brown, careful not to burn them.
  • In a food processor or blender, combine the roasted red peppers, tomatoes, toasted almonds, garlic cloves, and the slice of toasted bread torn into pieces. Blend until the mixture forms a coarse paste.
  • With the blender running, slowly add in the sherry vinegar and extra virgin olive oil. Blend until the mixture becomes smoother but still retains some texture.
  • Add the smoked paprika, cayenne pepper (if using), and salt to taste. Blend briefly to incorporate.
  • Transfer the sauce to a serving bowl and garnish with chopped fresh parsley. Serve with your choice of seafood, grilled vegetables, or meat.

Storage Tips

Romesco sauce can be stored in an airtight container in the refrigerator for up to one week. For longer storage, it freezes well; freeze in small portions and thaw as needed. The flavors often deepen and meld after a day, making it even more delicious.

Useful Properties of Almonds

Almonds, a key ingredient in Romesco sauce, are highly nutritious, offering a good source of vitamin E, magnesium, and healthy fats. They contribute not only to the sauce’s creamy texture but also to its health benefits, including heart health and weight management.
