  • Rinse the sticky rice thoroughly under cold water until the water runs clear. Then, place the rice in a bowl and add enough water to cover it. Allow the rice to soak for at least 30 minutes or ideally overnight.
  • After soaking, drain the water from the sticky rice and transfer it to a steamer lined with cheesecloth. Steam the rice over medium heat for about 20-25 minutes or until it becomes tender and fully cooked.
  • While the rice is steaming, prepare the sauce. In a saucepan, combine the coconut milk, palm sugar (or brown sugar), and salt. Stir the mixture over low heat until the sugar completely dissolves and the sauce is heated through. Do not let it boil.
  • Once the rice is cooked, remove it from the steamer and transfer it to a large bowl. While the rice is still hot, pour 3/4 of the coconut sauce over the sticky rice, and gently fold it in until the sauce is evenly distributed. Let the rice sit for a few minutes to absorb the flavors.
  • Take the diced ripe mangoes and arrange them on a serving plate.
  • To serve, take a small bowl or a mold, fill it with the sticky rice, and press it gently to shape it. Invert the bowl over the plate with the diced mangoes, and carefully lift the bowl to release the molded sticky rice onto the plate.
  • Drizzle the remaining coconut sauce over the top of the sticky rice, and sprinkle some sesame seeds for garnish.
  • Thai mango sticky rice is now ready to be served!
