  • Clean the mushrooms with a damp cloth and slice them thinly.
  • In a large pan, heat the olive oil and butter over medium heat until the butter melts. Add the chopped onion and garlic, sautéing until they are translucent and fragrant.
  • Increase the heat to medium-high and add the mushrooms to the pan. Cook, stirring occasionally, until the mushrooms are golden brown and their liquid has evaporated, about 5-7 minutes.
  • Pour in the broth, scraping up any browned bits from the bottom of the pan. This will add depth to the sauce.
  • Lower the heat to medium. Stir in the heavy cream and thyme, and simmer until the sauce thickens slightly, about 5 minutes. Season with salt and pepper to taste.
  • If the sauce is too thick, you can thin it with a little more broth or cream. Adjust the seasoning if necessary, then remove from heat.
